Roast Chicken with Garlic Green Beans and Potatoes Recipe

We eat a lot of chicken around here.  It's cheaper than beef (we buy organic) and has less calories.  The kids prefer it too.  So I have yet another chicken recipe for you and 2 more to share soon!!

This is a slightly different version of my Roasted Chicken with Lemon Garlic Green Beans, the lemon in that recipe was overwhelming to my family so I removed it and added zucchini for more vegetables.  

I love this dish because it's all in one, you don't need to make any sides!



Roast Chicken with Garlic Green Beans and Potatoes
Ingredients
3 Tbsp olive oil
4 cloves of garlic, minced 
1/2 tsp sea salt 1/4 tsp pepper
1/2 pound trimmed green beans (I used frozen)
1-2 small zucchini, sliced
5 small red potatoes
2 chicken breasts

Directions 
1. Preheat oven to 450 degrees. Coat a medium baking dish (I used 2.5 quart corning wear) or cast-iron skillet with 1/2 Tbsp of the olive oil.  
2. In a large bowl combine the remaining oil, garlic, salt and pepper. Add the green beans and zucchini slices and toss to coat. Using tongs remove the vegetables and arrange them in the dish. Add the potatoes to the same olive oil mixture and toss to coat. Using the tongs arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. Place the chicken in the same bowl with the olive oil mixture and coat thoroughly. 
3. Place the chicken in the dish or skillet. Pour any of the remaining olive oil mixture over the chicken. Roast for 45-50 minutes or until the potatoes are tender. Serve immediately.
