Crispy Oven "Fried" Chicken

Today I'd like to share one of my in-law's recipes.  Well, it's partly their recipe and partly mine because I changed a couple ingredients.  So let's call it a blended-family recipe. :)



It's a crispy chicken without the need to fry!  It has a little flavor kick and a great crunch from the onions/bread crumbs.  A perfect recipe for a day when you want some comfort food (I'll admit to also making a wonderful scalloped potato recipe the same night, talk about comfort food, not an interesting vegetable in sight, ha!).


Crispy Oven Chicken
Ingredients
1/2 Cup Mayonnaise (or vegenaise)
1 Tbsp Worcester sauce
1/2 tsp salt
1/4 tsp pepper
1/2 cup bread crumbs
1/2 cup fried onions 
2 lbs cut up chicken parts

Preheat oven to 375.  Mix ingredients (except crumbs, fried onions & chicken).  Put bread crumbs and fried onions (crush them a bit with your hands first) on a piece of waxed paper.  Add chicken to the mayonnaise mixture.  Toss to coat well then roll in crumbs to coat completely.  Bake 25-30 minutes or until browned and fork tender.
