I was happy this last Saturday to see zucchini and scallopini squash amongst the beets, chard and onions. We are big fans of zucchini around here and eat it year round. Having local organic squash sounds just about perfect to me! And of course you already know that we like artichokes.
I have a tasty springtime stew in my crock pot right now filling up my kitchen with a lovely aroma. I used zucchini and carrots instead of the usual potatoes. I'll post the recipe tomorrow.
