I've been meaning to share one of my favorite go-to quinoa recipes for awhile now. I make this for my family at least a couple times a month and it is always a bit hit. This salad is perfect for a hot summer day and makes even better left-overs.

Ingredients
1 1/2 cups dry quinoa
1 medium cucumber, diced
1 cup cherry or grape tomatoes, quartered
1/2 cup olives, minced
1/2 cup basil, finely chopped
1 Tbsp olive oil
2 Tbsp lemon juice
sea salt to taste
feta cheese to taste
Instructions
1. Rinse quinoa and add 3 cups of water to either a pan on the stove or use your rice cooker. Cook for 25 minutes or until all the water has been absorbed. Dice the cucumber, tomatoes, olives and basil and add to a large mixing bowl.
2. Once the quinoa is cooked, fluff and add to the bowl of vegetables.
3. Whisk together oil, lemon juice and sea salt and pour dressing over quinoa mixture. Let flavors marinate for 5-10 minutes before serving. Top with feta to taste.
So simple! Even my 4 year old will eat this, especially if we load it up with feta. She'd eat feta out of the container with a spoon if I let her. :)
