I continue to be amazed that my Vitamix can not only blend smoothies but also cook soup! A-mazing. Anyway, I found another soup recipe to share with you all. Around here broccoli cheese is a favorite so I had to give it a try. I prefer my soup on the chunky side which is easily accomplished by saving some cheese and broccoli to add right at the end.
Vitamix Broccoli Cheese Soup
Ingredients
1 cup milk
1/2 cup shredded low fat cheddar cheese
2 cups broccoli (or cauliflower) fresh or frozen, steamed (set 1/2 cup aside)
1 teaspoon diced onion
1/2 chicken or vegetable bouillon cube
Directions
1. Place all ingredients into the Vitamix container in the order listed and secure lid.
2. Select Variable 1.
Turn machine on and slowly increase speed to Variable 10, then to High.
Blend for 5-6 minutes or until heavy steam escapes from the vented lid.
3. Add 1/2 cup broccoli and pulse for a couple seconds. Add a little shredded cheese to the top of each bowl.
Serves 1.5-2
